Pumpkin pie is one of those recipes you can easily make a day or two ahead. I use nutmeg, ginger and cinnamon to add a little spice and warmth, and condensed milk to make the whole thing gloriously sweet. A shortcrust pastry case is filled with a creamy and lightly spiced pumpkin filling. Its nice to get a little bit of it in with the pie.
